Morning toasties are convenient and delicious and the good news is they can be packed with high nutrition too. My take on my two favorite morning toasties is simple and won't take you more than 15 minutes to prepare, suitable for lazy weekend mornings or a quick healthy lunch during busy work days.
Sundried Tomato Avocado Toastie
Ingredients
2 slices of bread of your choice, I used sourdough
one avocado
sundried tomatoes in olive oil
1 tbsp cream cheese or feta cheese/ goat cheese
honey
spring onion
chili flakes
pinch of salt
pinch of pepper
fresh basil
Method
Start with slicing your sourdough bread and brushing your slices with the oil from the sundried tomato jar. Preheat your oven to 200 degrees. Place your toasties in the oven and flip over after 3 minutes. When your bread is nice and crispy spread cream cheese or cheese of your kind over it. In a separate bowl prepare your avocado mixture, mash the avocado with spring onion, a small handful of fresh basil, a pinch of salt, and chili flakes, and drizzle with honey. Spread the mixture on your bread and add a few diced sundried tomatoes and a crumble of feta. Close your toastie and place it on the pan until golden, a real-life perfection.
Spicy Melt Tuna Toastie
Ingredients
2 slices of bread of your choice
1 tin tuna in water/ brine
1 spring onion
1tbsp jalapenos
1 tbsp greek white yogurt or light mayo
1tbsp American mustard
1 garlic clove
fresh parsley/ basil
cheese of your choice, I used taleggio but blue cheese or mature cheddar would work too
2 tbsps olive oil
pinch of salt
pinch of pepper
pinch of chili flakes
Method
Preheat your oven to 200 degrees. Start with preparing your bread mixture in a bowl, slice your garlic and fresh parsley and mix it with olive oil, a pinch of salt, and chili flakes. Spread the mixture on your bread and place the bread in the oven until golden. In the meantime prepare your filling, slice your jalapenos and spring onion and mix with the tin of tuna. Add a pinch of salt, pepper, and greek white yogurt or mayo. Place the cheese on your golden toastie and spread the mixture on top. Close your toastie and place it on the pan for the final touch of golden. Oh, tuna toasties just SLAP differently.
