Something for a lazy weekday night

Shrimp Pita Bread Wraps with Hummus, Goat Cheese and Chimichurri Sauce.

Looking for a fast, flavourful and healthy dinner, or something that you can bring to work as a cold lunch ? Then this Mediterranean inspired wrap might tick all the boxes. You can easily replace the main ingredients ,shrimps, by leftover chicken or beef. The soft and chewy pita bread and tomato, cucumber and onion remind me of healthier take on gyros. It's a perfect addition to your busy weekday schedule.

Start with preparing your chimmichurri sauce. You will need fresh or dried parsley and oregano, fresh garlic, salt, pepper and red chilli flakes. You can add a vinegar for the extra kick. Start your base with 2 tbsp of virgin olive oil, add your freshly cut parsley, garlic, salt, pepper and red chilli flakes. This is good sauce to prepare ahead and keep it in the fridge, it makes a great base for salads too.


Once the base is ready, it's time to prepare your shrimps. If you like to add a little bit more more flavour and spice sprinkle your shrimps with pinch of salt, olive oil and siracha sauce. After your shrimps are marinated, they are ready to go on the grill. While the shrimps are are getting cooked you can work on your sides. Chop your veggies, I've used cherry tomatoes, cucumber and onion. Pile everything into a bowl and toss it with a few teaspoons of chimichurri sauce.


Toast your pita bread, I've used wholegrain pita bread in my recipe. You can toast it on the low broil setting or just use a regular toaster. That way you get a little bit of crispiness on the outside with the soft, chewy bread on the inside.


If you want to keep it simple, you can use your flavoured hummus and skip this step, however I recently tried adding lemon juice with rosemary and chimichurri sauce and I love it. If you want to try that out, simply stir these mix - ins into a plain hummus.

Last step, assemble your pita bread. Lay out your toasted pita bread, spread it with hummus, add baby greens and then chopped chimichurri veggies and spicy shrimps. Sprinkle with goat cheese and drizzle with a bit of chimichurri sauce to taste.


You likely won't need a side for this meal, however if you fancy something extra. I would recommend adding sweet potato fries or red cabbage coleslaw.

  • 2 pieces of wholegrain pita bread or other wraps

  • 1 lemon

  • 1 cucumber

  • 150g cherry tomatoes

  • 1 red onion

  • jumbo tiger prawn shrimps ( I used 3-4 shrimps per one pita)

  • fresh rosemary

  • fresh/ dried oregano

  • fresh/dried parsley

  • pinch of red chilli flakes

  • pinch of salt

  • pinch of pepper

  • siracha sauce

  • virgin olive oil

  • 2 garlic cloves
