Easy Indian Lentil Soup For A Rainy Day

Craving Indian food but have no experience with cooking? You don't need to have a degree in cooking to master this delicious Indian lentil soup. All it takes is the right ingredients, love for food and some good tunes to dance along whilst cooking. So get your apron ready because I am about to make an Indian chef from you!


Ingredients & Instructions


2 cups red lentils

1,5 l water

1 tsp turmeric powder

1 tsp chilli powder

1,5 tsp salt

1 cube veg stock

1/2 tin chopped tomatoes

1/4 medium onion chopped

1 clove of garlic chopped

1 sprig of curry leaves

1 tsp mustard seeds

1 tsp cumin seeds

a big pinch of ginger

2 tbsp veg oil

fresh coriander to garnish

Sourdough bread or naan bread



1.

Start with washing your red lentils until the water runs clear.

Prepare a medium size pot to fit 1,5l of water and your washed red lentils.


3.

Bring the water to boil and add turmeric powder, salt, chilli powder and your chopped tomatoes.

Give it a good stir and let cook for approximately 20 minutes.

While soup is cooking, prepare a frying pan with veg oil and chopped onions. Wait until onions turn slightly brown and then add mustard seeds, cumin seeds, pinch of ginger and chopped garlic.


5.

Once you hear your mustard seeds popping, add curry leaves to the mixture. Now your takhda is ready to be added to your dahl. Let it bubble for a minute and ta - da your first Indian lentil soup is ready to be served!



Serve it with...


You can enjoy your soup with sourdough bread or naan bread. I went for the crunchy option of oven baked sourdough with pinch of olive oil and salt. Don't forget to garnish your masterpiece with fresh coriander!
