Welcoming Spring With a Glow

After a long year of January, February finally arrived. The Glow Salad recipe is here to help you get through the frosty temperatures and under-the-weather feels. Its colourful base will remind you of the brighter days ahead of us. The Glow salad is one of my favourite recipes for this season, it's simple to make and tastes great. I'm sure it will quickly become one of your favourite go-to meals during the week or for your next summer barbecue.

To prepare the Glow Salad to serve 1/2 you will need

  • few stems of kale

  • 2 cups handful of butternut

  • 1/2 red onion

  • 1 parsnip

  • 1 glove of garlic

  • 2tsp pumpkin seeds

  • thyme

  • 100g of stilton/ goat cheese/ halloumi

  • 1 tbsp olive oil

  • 1 tsp honey

  • juice from 1/2 lemon

To start with the preparation of your Glow salad preheat your oven to 200 degrees. Cut your butternut into square pieces, chop your parsnip and place it in a pan with 1/2 red onion and sprinkle with thyme. I've used a vegetable peeler to cut my parsnip into wafer-thin slices. Leave to cook in the oven for 20 minutes.

Whilst your butternut is getting cooked, you can start preparing the rest of your ingredients. Heat the olive oil in a large skillet over medium-high heat. Add the garlic and quickly stir it around to avoid burning. Throw in the kale and use tongs to move it around the skillet. Sprinkle with salt and pepper and continue cooking until slightly wilted but still crisp, about 1 to 2 minutes. Remove the large skillet from the heat and place your kale in a bowl.


In a small bowl mix olive oil with honey and lemon juice. Once all the ingredients soak into one, pour the dressing over your kale. In a small skillet over a small heat toast your pumpkin seeds. Once crispy sprinkle the kale.


Your butternut and red onion will be cooked and crispy by this time so you can add them to your salad mixture. I picked stilton cheese because it goes perfectly with the flavours however you can go with your own preference. Sprinkle the stilton over your salad and you're ready to serve!
